Nataša and Matej Tomažič are creating refined Vipava cuisine with their hearts and souls at this homestead with a tradition more than 300 years old. Chef Matej stresses local culinary tradition, nature and ingredients that are home-produced. They may look simple but are often quite unusual; carefully thought-out combinations give the plates unique character. You can try something new each season. To begin with, they will offer you beef carpaccio with sheep cheese, while the raspberries and blueberries give it a fresh kick. A unique dish is made with simple ingredients, which, combined together, become something incredible: crystallised dandelion with yoghurt and honey. One of their constant dishes are the pig’s cigars filled with wild hops and pancetta in thyme sauce – absolutely fantastic. The ones with a sweet tooth will enjoy the insanely delicious homemade ice cream and the more curious ones will try the wonderful combination of fennel and white chocolate with compressed pear. If you still prefer traditional cuisine, then definitely try the tarragon štruklji – tarragon is namely an ingredient which, along with rhubarb, the chef loves to create new plates with. The rich herbal garden is his passion and the common thread of all Majerija’s plates. To enjoy the most, let the sommeliers show you a choice of wines from their more than 200 year-old wine cellar. A true Vipava experience is even better if you spend the night there, under the herbal garden.
