The three-hundred-year-old Majerija, hidden among stone walls and beneath the shade of old trees, breathes with the soul of the Vipava landscape. As you approach, an idyllic scene unfolds before you: an ancient house with stone arches, heavy oak tables, rustic details, and a richly stocked wine cellar. The herb garden is a treasure trove of aromas and flavours, which the chef uses with remarkable finesse. His cuisine is deeply connected to the changing seasons. A creamy porcini pâté evokes the forest itself, refreshed by a salad of fresh fennel, while pomegranate seeds add juiciness and vivid colour contrast. Thin slices of raw porcini further emphasise the mushrooms’ pure, earthy flavour. Inside crisp pastry pouches, the flavours of zucchini, zucchini blossoms, and aromatic porcini intertwine beautifully, while fresh tomato cubes with herbs and black sesame bring brightness and freshness to the dish. The delicately roasted and succulent venison tagliata perfectly captures the autumnal character of the plate. Its flavours are elegantly completed by quince cream with chestnut pieces and a fragrant herb purée. At Majerija, every dish is a carefully considered story about the meeting of tradition and contemporary culinary boldness. The plates bring together intoxicating aromas and surprising contrasts, creating a harmony of homeliness and refined gastronomy. These are dishes that are simply worth experiencing.
