Perched on Castle Hill, Strelec is one of the capital’s most distinctive dining destinations. The city’s bustle gives way to views of Ljubljana’s rooftops, the Ljubljanica River, and the hills in the distance. The restaurant offers tasting menus ranging from shorter, more intimate experiences to elaborate multi-course journeys that unfold over several hours. Carefully selected wines and spirits complement the menus and enhance the overall experience. Each menu is conceived as a thoughtful narrative in which local ingredients meet innovative culinary techniques. One ingredient that appears regularly is cauliflower, a particular favourite of the chef. Combined with egg yolk, breadcrumbs, and truffles, it is transformed from a humble vegetable into a dish that surprises from the very first bite. Spelt and mushrooms may sound simple, but the result is a refined and precisely executed dish that demonstrates how much can be achieved with seemingly modest ingredients. Another memorable combination brings together beef, onion, rösti, lard, and currants. These robust, almost rustic flavours are carefully balanced to create a dish that combines depth, richness, tenderness, and freshness. For dessert, white chocolate, pear, Jerusalem artichoke, and yuzu come together in a composition aimed at those who appreciate elegant, nuanced sweetness. Refinement is Strelec’s quiet strength.
