Spargus restaurant is located on the upper floor of Gastuž, a building that has stood for more than 550 years and is considered the oldest continuously operating inn in Slovenia. Yet the past here is not merely a backdrop - it is part of the experience itself, felt in the atmosphere, on the plate, and in the glass. Beside the restaurant is a charming café, perfect for a stop after visiting the nearby Žiče Charterhouse. When hunger strikes, one of the menu’s highlights is the trout with horseradish and daikon radish. The juicy, fresh trout from pristine waters is gently cooked and topped with a sharp horseradish cream beautifully balanced by the freshness of daikon radish. The duck breast was cooked to perfection, accompanied by parsnip purée and crispy fried parsnip slices, while rowan berries, red cabbage, and pickled plum completed the plate. Equally impressive were the homemade gnocchi in a creamy truffle sauce, generously finished with freshly grated truffle and enriched with bacon for even deeper flavour. For dessert, a pear crème brûlée provided a memorable finale. The classic dessert remained recognisable, while the pear added pleasant freshness. The wine list, especially among white and semi-sweet wines, clearly highlights the wines of Slovenian Styria. Other Slovenian wines pair beautifully with the dishes as well, while guests who enjoy looking beyond the borders can also choose from carefully selected international labels.
