Gault&Millau's review 2026

The Spargus restaurant is located on the top floor of Gastuž, which has been standing for more than 550 years and is considered the oldest still operating restaurant in Slovenia. But the past is not just a backdrop, but part of the experience – it can be felt in the space, on the plate and in the glass. There is a pleasant café next to the restaurant, perfect for a stop after visiting the nearby Žiča Charterhouse. When hunger awakens, among the peculiarities of the menu is trout with horseradish and daikon radish. Juicy, fresh trout from clear waters, gently roasted, is topped with a cream of sharp horseradish, which balances nicely with daikon radish. The duck breast was excellently roasted, served with parsnip puree and fried parsnip slices, topping the plate with partridge, red cabbage, and pickled plums. Homemade gnocchi in creamy truffle sauce, on which truffles are grated, were also excellent, and bacon provides an even better taste. A sweet finish was brought by crème brûlée with pear. The classic dessert remained recognizable enough, and the pear added a pleasant freshness to it. The wine offer of white wines and wines with residual sugar relies noticeably on Styrian Slovenia. Other Slovenian wines also go well with the dishes, and for those who like to look across the border, foreign labels are available.
