Chef's Restaurant
On Gornji Trg, old Ljubljana still has the power to make time slow down for a moment. That is precisely why Špajza & Sorbara Steak House, with its charming garden, feels perfectly at home here. The restaurant possesses that rare combination of character, charm, warmth, and confidence that makes an immediate impression. Meat takes the center stage. But before the larger cuts arrive, Špajza & Sorbara demonstrates its expertise through cold starters. The beef carpaccio opens the meal with clean, precise flavours, while the steak tartare quickly reveals that raw beef is treated not as just another menu item, but almost as a discipline in its own right. Their approach to meat is built on quality, knowledge, precision, and respect for the ingredient. The menu also includes pasta and seafood dishes, ensuring the restaurant is not defined solely by the grill. Fuži, žlikrofi, risottos, fish, and octopus add variety to the offering. The heart of the restaurant, however, lies elsewhere. Cowboy steak, porterhouse, ribeye, and tenderloin - names that already suggest an evening far more substantial than a light meal. These are cuts for guests who appreciate fire, a beautifully caramelized crust, a juicy interior, and that brief moment of silence when the first bite earns a satisfied sigh. At that point, no menu description is necessary. Špajza & Sorbara does not feel like a restaurant that merely boasts about its meat. It feels like a restaurant that truly understands it.
