Posestvo Gjerkeš brings together natural beauty, tranquility and comfort with a refined culinary experience deeply rooted in the landscape of Gorič-ko. Here, the region’s flavours are reimagined through a contemporary and elegant lens, while a thoughtfully curated wine selection - featuring both the estate’s own labels and outstanding regional wines - completes the story on the plate. The experience begins with a series of imaginative amuse-bou-ches. A local langaš filled with pumpkin seed cream and topped with blood sausage crumbs, a buckwheat tart with roasted mushrooms and leek, and a Jerusalem artichoke macaron with pear each offer a distinct glimpse into the restaurant’s philosophy. Beetroot tartare is elevated with peach gel and goat yogurt gel, while horseradish ice cream introduces a refreshing and unexpec-ted contrast. It is a dish that demonstrates how familiar ingredients can be transformed through creativity and precision. One of the standout courses is the brook trout, grilled over a hibachi and served with an intense sauce made from fish bones and Chardonnay. Accompanied by greens presented in three different textures, the dish balances depth, freshness, and technical finesse. The venison fillet is equally compelling. Perfectly cooked to preserve its tenderness and juiciness, it is served in a rich meat sauce enhanced with mustard seeds. A panko-fried béchamel croquette provides a bold textural counterpoint, while marinated sour cherries and fresh rosemary introduce a vibrant fruit element. At Gjerkeš, guests encounter a thoughtful interplay of flavours, techniques, and textures that transforms simple regional ingre-dients into something modern and quietly daring.
