The mighty Tabor Castle is far more than a backdrop: it is a culinary stage on which Pavus impresses with quiet confidence, precision, and a remarkable sense of detail. The chef’s plates speak the language of the seasons, wild herbs, and beer, the element that gives Laško its unmistakable identity; all presented with an elegance that feels entirely natural rather than studied. The evening begins with a luxurious yet understated introduction: homemade sourdough bread, butter enriched with browned cream, Savinja Valley želodec, an irresistible bun with chicken pâté, a cracker with herb cream, and a variation of beetroot. From there, the courses unfold thoughtfully, each carrying its own idea, rhythm, and purpose. Adriatic amberjack in beer ponzu gains aromatic depth from spruce oil, while a crisp black cuttlefish shell is filled with prawn tartare. One of the evening’s highlights is the refined interpretation of Ptuj onion: onion paired with a fried egg yolk reveals all its dimensions, from velvety purée to delicate crisp lace. The sweet finale is playful and imaginative: shiso basil ice cream, sour cherry cream, pickled plum, and caramel cake. Even in dessert, Pavus remains true to itself - precise, thoughtful, and free from unnecessary showmanship. This is a kitchen with character: decisive, self-assured, and mature enough to let the plate say everything exactly when it should.
