In Korošica, it all starts with the ingredient. Not in the decoration on the plate and not in the big words. It is important where the raw material comes from, how fresh it is and what they can make from it in the kitchen. Lovers of fish and sea flavors, those who swear by a good piece of meat, as well as guests who prefer to choose a vegetarian plate, come to their own account. The cuisine remains faithful to clear flavors, quality ingredients and precise execution. Fresh Adriatic tuna tartare, clean and distinctive, is complemented by smooth avocado cream, wasabi mayonnaise and ponzu sauce, which adds a pleasant freshness. From the seafood offer, we chose a sea frog fillet, firm and juicy, served in a classic butter sauce with lemon and mussels. A side dish of lentils and lamb's lettuce adds an earthy note, and confit leeks bring softness and a slight sweetness. Among the meat dishes, slow-roasted, pre-cooked veal convinces, extremely soft and full of flavor. It is accompanied by Jerusalem artichoke puree and roasted buckwheat dumpling. Since every day is the right day for hugs, especially sweet ones, at the end comes the hazelnut hug: a cake in which velvety white chocolate cream and intense dark chocolate mousse are intertwined, as well as the silky sweetness of homemade caramel. A scoop of coconut ice cream creates a wonderful contrast.
