Idrija is more than a town of mining heritage and lace-making. The stories of miners and lacemakers are still alive here – in the memories of the locals and in their sense of belonging to the place. They also find their echo in Restaurant Jožef. Heritage is transferred onto the plate, not as a museum relic, but as a contemporary culinary experience. Smukavc, once a humble meal, takes on a more refined form here, while the masterfully prepared Idrija žlikrofi remain a timeless symbol of the town and its pride. Among the more distinctive dishes, the duck fillet stands out. Thanks to its long preparation at a low temperature, the meat is tender and juicy, while the fig and balsamic sauce adds sweet-and-sour depth, enriched by the flavours of Gorenjska prata. The pork tenderloin wrapped in crispy pancetta also draws attention. It is served with homemade žlikrofi, once again recalling tradition, while lace adds Idrija’s signature to the plate and the sauce ties the flavours together into a rounded, satisfying dish. The sweet finale remains rooted in a sense of home. Tarragon dumplings with strawberry purée and vanilla sauce evoke nostalgia and homeliness, yet appear thoroughly contemporary on the plate. Jožef is more than just a stop for a good meal. It is proof that Idrija’s heritage can breathe on the plate with freshness and confidence, above all with flavours that linger in the memory.
