There is no hurry in Planinka. And that's exactly where her charm lies. In the Vbutice family hotel, the cuisine lives in the rhythm of the Upper Savinja Valley – calmly, thoughtfully and with respect for the space that surrounds it. Upon arrival, it is clear that the culinary story, which develops in Planinka with a lot of feeling, knowledge and respect for the ingredients, is not only an addition to the hotel's story, but an important part of it. The dishes are based on local ingredients, of which they are sincerely proud, skillfully and confidently dressing them up into modern and cleaned plates. The flavors get a new, fresh interpretation that captures the character of the landscape and the spirit of the place. For a cold appetizer, we were impressed by the trout, prepared with a sense of lightness and freshness. Although Polenovka does not come from the traditional treasure trove of the Upper Savinja Valley, Planinka puts it in an interesting dialogue with local elements. The plate shows a more contemporary side of the kitchen, which understands the local environment more broadly – as an inspiration, not as a strict limitation. The fillet, wrapped in spinach leaves, was cooked precisely – it remained tender and juicy, and an excellent vegetable dumpling was served next to it. Lovers of meat plates also leave the table satisfied, be sure to try the upper Savinja stomach.
