Lipica, the timeless jewel of the Karst landscape, has undergone a remarkable transformation in recent years. A visit may begin with a walk across green pastures where only the neighing of horses and the whisper of the bora wind can be heard. Yet Lipica is not only the home of magnificent Lipizzaner horses, but also an appealing culinary destination. The focus is on seasonal, traditional Karst cuisine. On the Lipica marenda platter, the icons of the Karst region take center stage: prosciutto, pancetta, and aromatic budjola. Warmth comes from freshly baked frtalja, while sheep’s and goat’s cheese complete the selection. Slices of aged roast beef are laid over creamy cheese brightened with refreshing lime. Crushed hazelnuts and mustard seeds add lively texture. Handmade ravioli are filled with rich cheese and served in a tomato sauce, elevated with Parmesan espuma, basil powder, herb oil, and crispy pancetta. A cut of beef renowned for its pronounced flavour is cooked just enough to remain pink and juicy at the center. The slices of flank steak rest on a bed of fresh arugula, while shaved Parmesan and a balsamic reduction tie the flavours together beautifully. Lipica thus reveals itself as an excursion destination with many faces: Lipizzaner horses, the Karst landscape, and plates that bring the flavours of this unique place vividly to life.
