COB expands the notion of what constitutes a superior dining experience. It's not just a sequence of elaborate plates, but a story, a game, and a surprise all rolled into one. From the rich family tradition of catering, a place has grown where respect for the past spills over into confident, modern and bold cuisine. COB builds on a tasting menu that is designed as a culinary journey. Over the course of about two hours, eight thoughtfully crafted chapters are combined, telling the stories of landscapes, cultures and tastes with technical precision, playfulness and surprising twists. Local and regional are the starting point, and when we visited, we went on a culinary trip around the world. Each dish represented a new country, a new mood and a new story, and at each course we received a symbolic stamp in our passport, which turned the experience into a playful and unforgettable experience, from the British classic fish and chips, fried fish with fries in a new guise, to the American cheese cake. The plates are technically sophisticated, visually stunning and extremely precise – with bold combinations, surprising textures and a refined balance of flavours. Authorial, confident and thoughtful to the last detail – here the imagination has no limits.
