At the heart of a prestigious casino and hotel destination lies the elegant fine-dining restaurant Calypso. It offers its guests nothing but the very best. The Mediterranean-inspired menu is built around seasonality and is particularly renowned for its exceptional seafood dishes. Among the highlights of the menu is the roasted scallop, whose pure flavour is elevated by a silky beurre blanc sauce and a delicate touch of grated smoked egg yolk. The dish melts in the mouth and provides the perfect beginning to a maritime culinary journey. The paccheri pasta with a ragù of assorted tomatoes, chili, and creamy stracciatella delivers a true explosion of flavours. Fresh cherry tomatoes, spicy chili peppers, and basil espuma ensure that every bite delights. Equally impossible to overlook is the braised venison served with beetroot confit, pickled rhubarb, and beetroot relish. The tender meat intertwines beautifully with earthy beetroot notes and the gentle acidity of rhubarb, creating an outstanding game dish.
