In the heart of the prestigious casino and hotel destination is the elegant fine dining Restaurant Calypso. It offers only the best to its guests. The Mediterranean offer is based on seasonality and is known for its first-class seafood flavors. Among the highlights of the menu, roasted scallops stand out; The pure taste of the mussel is enhanced by a silky buttery sauce and a hint of grated smoked egg yolk. The dish melts in your mouth and is the perfect start to a seaside experience. Pasta paccheri with ragout of different tomatoes, chili and creamy stracciatello is a real explosion of flavors. Fresh cherries, hot peppers and basil foam make sure that every bite is impressed. Also not to be overlooked is the stewed deer with beetroot confit, pickled rhubarb and beetroot relish. The tender meat is intertwined with a note of beets and a slight acid of rhubarb, which together create an exceptional taste of venison. The rich wine list emphasizes Slovenian specialties from Goriška brda and the Vipava Valley and includes selected foreign bottles, so that you can always find the right accompaniment to exceptional dishes.
