At a time when restaurants often rely on size, spectacle, and the number of guests they can seat at once, a very different story is unfolding in Zgornja Polskava. There are only a few tables - but infinitely more bold and inspiring ideas. With their exclusive experience “Between Fire, Whispers and Memories,” chef Jure Brložnik and his wife Maja guide guests through a true game of flavours. The first bites arrive at the table without any explanation of the ingredients. As guests try to guess them, the room quickly fills with laughter, curiosity, and that rare sense of playful anticipation that great dinners seldom create so early in the evening. Then the game transforms into storytelling. “In darkness it discovers light and awakens into life” introduces a tartare of roasted beetroot. This is followed by a maritime twist: “When the sea departs, but leaves behind something delicate” brings butter-seared scallops embraced by cooked chestnuts and pecans. All the elements rest in an aromatic miso broth enriched with seawater and herbal oil. So many flavours and textures come together in a single, harmonious bite. Then comes “Calm in the water, until the forest begins to speak”: roasted fillet of meagre fish paired with oyster mushrooms and a sunny-side quail egg. This is not merely a story you read on a menu; it is something you feel through plates that unmistakably carry the chef’s personal signature.
