Its energy is immediate, youthful, urban, and playful - something you sense the moment you enter and which the food quickly confirms. Created under the culinary vision of Ana Roš, JAZ is designed for guests who prefer lively conversation and shared discovery over formal dining rituals. The menu encourages exploration, with dishes intended to be passed around the table, sampled together, and discussed between bites. It is the kind of place where curiosity becomes part of the experience. Among the signature plates are Ana’s favourite Waldorf salad, combining crisp apples and celery with a kefir dressing and walnuts, as well as her interpretation of vitello tonnato. Pasta dishes build unexpected bridges between Adriatic and Asian influences, while heartier options such as venison loin and Wiener schnitzel provide satisfying depth and comfort. During our visit, one of the most memorable dishes was roasted sea bass served with peas and strawberries. Although the combination sounds bold, the delicate fish remains the focal point, while the accompanying flavours introduce surprising twists that keep each bite engaging.
