When we open the door to the Franko House, we enter a world in which nature speaks through every bite. Ana Roš and her international team intertwine the tradition of the Soča Region with a bold vision of top world cuisine. Dishes are not just a game of flavors, but a conversation between nature, time and man. Each ingredient of the tasting menu reveals the story of the place it comes from. At first glance, the simple salad turns out to be the first surprise of the evening, because a walk through the home garden combines the crunchiness of a salad and a combination of fruit and vegetable notes: the sweetness of pumpkin, the freshness and sweetness of mandarin, at the bottom there are plums in elderflower jelly, a refreshing dressing made of tomatoes and watermelon, and crunchy sunflower seeds for sprinkling. Outstanding! The sparkling continuation of the game of flavors only intensifies, with homemade tagliolines accompanied by a seductive sauce of juicy melon and savory ladins, and the addition of coffee oil and a dash of chili round out the flavors. The main course with roe deer, blackberries and Jerusalem artichoke is also spectacular, and the highlight of the sweet harmony is red potato dumpling. Ana Roš creates bold, subtle and complex flavours, far beyond the boundaries of the classics. Her cuisine is strong, passionate, subtle and playful, but at the same time carefully thought out. The Franko House offers a comprehensive experience of space, season and moment, captured in every plate.
