Chef's Restaurant
The wine bar at this address has undergone a transformation, and its name has changed as well, yet its essence remains firmly rooted in the local landscape. The transformation does not represent a farewell to tradition; it is rather its continuation in a more personal, relaxed, and authentic form. We were treated to imaginative, seasonally inspired cuisine that knows how to dress familiar local flavours in a more contemporary guise. The beef tartare is prepared from top-quality meat - a classic that remains recognisable, yet gains enough modern accents to feel pleasantly surprising. The roasted eggplant comes with juicy tomatoes and fragrant basil, while in the oven it merges beautifully with luxurious burrata and delicately melted Parmesan. The dish is rich and aromatic, yet still pleasantly light. The squid is stuffed with peach and potato, accompanied by silky mashed potatoes and creamy spinach with mint, which brings freshness and a lively brightness to the plate. The flavours are deepened by a cream of dehydrated olives and roasted garlic. Crispy fried spinach provides textural contrast, adding a vibrant crunch that awakens the dish. The result is balanced, contemporary, and filled with refined contrasts. That is precisely Gustl’s character: homely, unmistakably Vipava in spirit, and distinctive enough to linger in memory long after the final bite.
