As you step through the castle entrance of medieval Štanjel, you are embraced by the serenity of a courtyard where, throughout the day, the sun paints beautiful shadows across the ancient stone walls. There, a kitchen awaits in which the Karst region speaks through its plates. The dishes follow the rhythm of nature: from seasonal herbs gathered nearby to local meats, homemade pasta, and fresh vegetables from neighbouring gardens. The amuse-bouches already reveal that this experience will be anything but ordinary. On one plate, traditional olives and blackthorn berries rest in olive oil; in a small pasta bowl, aged beef is elevated with succulent cubes of Adriatic prawns and drops of lemon-infused olive oil; while on a stone slab, crispy wild rice chips are topped with grey mullet pâté and trout roe. Homemade spaghetti with luscious zucchini pesto, elegantly twirled into a cone shape, is complemented by crispy fried pancetta and delicate mozzarella foam - a playful interplay of flavours, textures, and precise presentation. For refreshment, a fig sorbet sprinkled with the house vermouth is served. Even the dessert is highly original, combining the milky softness of goat yogurt and white chocolate with the freshness of raspberry sorbet, finished with pistachio crumble, fresh raspberries, and drops of pistachio cream. A visit here is therefore far more than simply a stop within castle walls - it is a culinary encounter with the Karst itself: calm, thoughtful, and filled with flavour.
