Gault&Millau's review 2026

Tolc possesses a rare quality that no inn can imitate: an authentic sense of the place from which it grows. It is deeply rooted in the rhythms of hill-country life and in the understanding that flavour begins long before food reaches the plate. The family farm, home-grown produce, nearby suppliers, and the rhythm of the seasons are not merely a pleasant story for the menu. They define the boundaries within which the kitchen operates – and it is precisely these boundaries that make it so interesting. Not everything grows in the hills, nor does it grow all year round, so the chef must make the most of what is available. The local culinary heritage is interpreted in a way that is both respectful and contemporary, which is why Tolc is far from an ordinary countryside inn. It offers guest rooms, a wine cellar, and a terrace, while retaining just the right amount of homely character despite its modern renovation. To begin, guests can choose from beef, trout, or vegetable tartare, tortelloni filled with smoked trout served in a horseradish sauce with roe, buckwheat turnovers with pear cream and seared ham, or žlikrofi filled with kid goat. Meat lovers are won over by the roasted veal loin, beef fillet, and lamb meatballs served on polenta made from trdinka corn. The menu remains vibrant, as seasonal additions prevent it from becoming repetitive. Daily lunches and tasting menus are also available, ensuring that every visit brings something new. And although Tolc is not a place one happens upon by chance, that is precisely part of its charm.
