The Kapušin inn has been managed and run by the third generation of the family. They take pride in the traditions of Bela Krajina and the preparation of local dishes, which chef Ana often reinterprets in a contemporary way, while her husband Roman complements them with carefully selected wine pairings, most often from Bela Krajina. The aroma of freshly baked bread wafts from the kitchen, and slices of smoked beef tongue on horseradish curd cheese with home-grown herbs, pumpkin seed oil, and seeds are a perfect accompaniment to a glass of sparkling local wine. Delicately marinated slices of Mlinar trout are equally enjoyable. The ravioli stuffed with oxtail meat are impressive, served with demi-glace sauce and sweet potato purée. The true star at Kapušin is undoubtedly the Bela Krajina lamb – we were enchanted by its masterful preparation on the grill. To finish, it is worth pausing over the trio of house desserts. Those with a sweet tooth face a pleasant dilemma over which will emerge the winner: the moist buckwheat potica with local curd cheese, vanilla ice cream with pumpkin seed oil and crunchy seeds, or the house gibanica, in which the rich flavours of local Štruclj curd cheese, walnuts, apples, and blueberries intertwine? At Kapušin, the menu is firmly rooted in its local surroundings, yet the kitchen adds enough contemporary flair to ensure that the dishes do not remain confined to tradition alone.
