The Ruj Inn proves that tradition does not mean predictability. On their plates, they revive authentic Karst flavours, but in a performance that can surprise. Ruj does not chase trends, but co-creates them using forgotten local raw materials. The ingredients are not tired of traveling, because everything is seasonal and local. The author's approach is already reflected in the beef tartare made from premium meat, which is only mildly seasoned, with the addition of mustard seeds. Instead of classic butter, the dish is accompanied by fermented cottage cheese, which adds acidity to it, while mixed tarragon provides an herbal touch. Fans will be delighted by the marinated duck breast; They are aromatic, soft and juicy, laid on a chicory salad, which balances the rich taste of meat with a slight bitterness, and dried figs add a pleasant sweetness to the dish. Creamy beans take care of a gentle transition, which warms the stomach and adds priceless warmth to the home hearth. The real surprise on the plate are the ribs of the foal, first gently smoked and slowly roasted, and then glazed in the oven with tomato sauce so that the meat melts in your mouth. Accompanied by a potato leaflet, roasted kale and fennel, and with an excellent wine accompaniment, the dish shows all the power of Ru's flavours. They speak confidently and elaborately through every plate.
