Gostilnica Ruj proves that tradition does not have to mean predictability. Authentic Karst flavours come alive on the plates here, yet in interpretations that still manage to surprise. Ruj does not chase trends - it helps shape them through the use of forgotten local ingredients. The produce never feels tired from travel, because everything is seasonal and local. The restaurant’s authorial approach is already evident in the beef tartare made from premium meat, only lightly seasoned and enhanced with mustard seeds. Instead of classic butter, the dish is accompanied by fermented cottage cheese, which adds a pleasant acidity, while folded-in tarragon leaves behind a distinct herbal signature. Guests are equally impressed by the marinated duck breast: aromatic, tender, and juicy, served on a chicory salad whose gentle bitterness balances the richness of the meat, while dried figs contribute a delicate sweetness. A creamy bean soup provides a softer transition, warming the stomach and bringing the priceless comfort of a home hearth. The true surprise on the menu is the foal ribs, first gently smoked and slowly roasted, then glazed in the oven with tomato sauce until the meat practically melts in the mouth. Served with layered potatoes, toasted cabbage and fennel, and accompanied by excellent wine pairings, the dish reveals the full strength of Ruj’s flavours: confident, refined, and eloquent in every course.
