The beginning is based on the concept of sharing food; A series of cold plates arrive on the table, inviting you to explore slowly. Vitello tonnato with velvet sauce, beef tartare with dehydrated tomatoes, spring onions and fried egg yolk, red trout in asparagus mousse with elderberry mayonnaise and tuna tataki with lime, soy, sesame, yuzu gel and tonic.
