Gault&Millau's review 2026

For decades, Trost has remained firmly rooted in the Karst region and is regarded as a true classic among connoisseurs of seafood cuisine. Located just a short distance from the main roads connecting inland Slovenia with the coast, yet secluded enough to preserve a sense of warmth and tranquility, Trost is not the kind of place one stumbles upon by accident - people come here with intention. The inn is renowned for its unwavering commitment to freshness, trusted suppliers, and traditional preparation of fish and seafood. The menu follows the rhythm of the daily catch, leaving no room for compromise: whatever arrives on the plate is first-rate and impeccably prepared. Among the staples, the raw Adriatic scampi stand out in particular. The cuttlefish salad is tender, aromatic, and beautifully balanced with juicy tomatoes. The risotto, cooked precisely al dente, is creamy and full of flavour. Every bite reveals succulent squid, queen scallops, the sweet tails of Adriatic scampi, and mantis shrimp, which reigns over the dish and lends the plate a touch of luxury. A special chapter belongs to the expertly grilled wild fish. Gostilna Trost is neither fashionable nor trend-driven, and it has no interest in being so. Its strength lies in consistency, tradition, and exceptional seafood cuisine, which is why it remains one of those places guests return to again and again in search of the true taste of the sea.
