Gault&Millau's review 2026

This inn in the heart of the Karst belongs among those culinary classics that refuse to bend to passing trends. Ravbar remains true to itself: to warmth, tradition, and flavours that need no complicated explanations. As a synonym for reliability and quality, it stands as a destination for everyone seeking an authentic taste of the Karst. Here, what matters are exceptional ingredients, time-tested recipes, and the kind of hospitality only a true family-run inn can offer. The culinary journey begins with prosciutto and continues with pasta dishes. Homemade ravioli are a constant on the menu - during our visit they were served with young pea cream, goat cheese foam, and sage butter with pistachios. Fluffy gnocchi bathe in a delicious sauce of sausage, cabbage, and Parmesan. The greatest house specialty remains the grilled cannelloni, which resembles a folded crêpe more than a classic cannelloni. Filled with prosciutto, cheese, and sautéed spinach, it covers the entire plate, while the natural meat sauce poured over it fills the inn with irresistible aromas. The highlight of the meat selection is the lamb from Mount Vremščica, beautifully roasted in the oven until so juicy and tender that the ribs are picked clean to the bone. Alongside it reign the phenomenal baked potato dumplings. The winning combination continues into the sweet finale with fig tart, the house cream cake, or apple strudel.
