Nestled in the embrace of picturesque Vipava, where one of the famous seven springs emerges from the rocky depths, lies Gostilna Podfarovž. The spring water brings refreshing coolness, while the atmosphere prepares guests from the very first moment for an indulgence of flavours. For meat lovers, there is hand-cut beef tartare made from dry-aged loin, while the seafood side of the story is told through trout tartare. A creamy roasted cauliflower soup provides comforting warmth; floating within it is a fritter of sweet Adriatic prawns coated with chopped almonds, while thin slices of fresh cauliflower and pearls of aged balsamic vinegar add freshness. It is a plate that surprises without ever becoming excessive. The highlight of the meal comes in the form of beef ribs that, after twelve hours of slow cooking, practically dissolve in the mouth. They are accompanied by demi-glace sauce, roasted and pickled carrots, rich wild garlic mayonnaise, and pickled wild garlic blossoms. A seared slice of potato polenta adds a traditional touch, tying the entire dish into a rich, colourful, and distinctly Vipava-inspired story of flavours. To conclude, the dessert titled “polenta and sour milk” arrives: unusual, bold, and memorable. Creamy polenta with white chocolate meets fresh passion fruit, sour milk ice cream, and crunchy popcorn. It is precisely this playful originality that beautifully captures the spirit of Podfarovž: homely yet daring, romantic yet never predictable.
