Perched within the walls of Ljubljana Castle, Gostilna na Gradu is the elegant restaurant of the renowned Jezeršek Family, whose influence has helped shape Slovenian gastronomy for years. The menu changes with the seasons, but certain dishes beautifully illustrate the restaurant’s philosophy. One standout is the dry-cured red trout served with trout caviar, sour milk, buckwheat crisp, green apple, and tarragon vinegar. The plate is visually refined, while the flavours are carefully balanced, transforming familiar local ingredients into something elegant and unexpectedly modern. Equally memorable is a more rustic creation: leteči žganci (“flying žganci”), a traditional dish reimagined at a higher level. Crispy fried chicken thighs, seasoned with local herbs, are paired with golden roasted potatoes that absorb every delicious flavour from the plate.
