At Mlinar, Idrija žlikrofi take centre stage. Not as an obligatory local speciality, but as a dish through which much more can be expressed: respect for craftsmanship, ingredients, and imagination. They are not served in just one way, but offered in classic, meat-based, forest-inspired, vegetarian, and even more adventurous seafood variations. To begin, they delight in a rich, hot herb broth, full of the aromas and flavours of fresh herbs. Then it is time once again for... žlikrofi! They impress when served with bakalca, a stew made from slowly cooked kid goat meat. But Mlinar does not stop at the classics. Žlikrofi with homemade cracklings or in roast gravy appeal to lovers of richer flavours. For those who prefer lighter dishes, there are spinach žlikrofi with chive sauce or a simple, pure version with olive oil and Parmesan. Black žlikrofi coloured with squid ink are filled with scampi and served in a velvety saffron sauce. And if you still have room, you can order a fine piece of meat. The žlikrofi appear as an accompaniment, but certainly not as supporting actors – everyone should know who the true hero of this house is. The sweet finale is more than a formality and remains faithful to a sense of home. Sweet žlikrofi with a walnut filling in a butter sauce or apple strudel with sweet-and-sour apples and raisins provide a fitting conclusion to the visit.
