Gault&Millau's review 2026

Just a few minutes from Ljubljana’s busy city center stands Gostilna Kovač, a restaurant whose history and tradition are evident in its atmosphere, its cuisine, and the quiet confidence that comes only with decades of experience. The menu is rooted in Slovenian culinary traditions while drawing inspiration from the Mediterranean. The restaurant has long been particularly renowned for its seafood, where the daily catch takes center stage. Whether it is sea bass, dentex, turbot, or another Adriatic delicacy, the philosophy remains the same: respect the ingredient and allow its natural flavour to shine. Guests can choose from specialties such as snails, frog legs, noodles with prawns or truffles, risottos, Adriatic scampi, octopus salad, and salt cod. Meat lovers are equally well catered for. Fried chicken remains an essential classic, while various steaks, veal rib chop, and beef fillet ensure that even the most devoted carnivores leave the table satisfied. Desserts continue the same approach. House-made ice cream offers a refreshing conclusion, while the banana and caramel cake strikes a pleasing balance between familiarity and indulgence. The restaurant also features facilities suitable for larger gatherings, celebrations, and business events. Yet the true essence of Kovač lies elsewhere. Not in the length of the menu, but in the feeling that this is a place where food is prepared for guests rather than for attention. No shortcuts, no pretension; just honest hospitality and cooking that remains true to itself.
