Family and tradition are the core values reflected on every plate at Čubr, a beloved restaurant now run by the fourth generation of the Potočnik family. The young chef, firmly rooted in the authentic flavours of traditional Slovenian cuisine, brings a contemporary creative twist to every dish. Their homemade bread is famous in its own right – enhanced with cracklings, sautéed onions, and truffles. The amuse-bouche already sets the tone: a creamy, airy homemade curd cheese, paired with corn grissini with flax seeds and drizzled with Kocbek pumpkin seed oil. The smoked trout was a revelation, elegantly paired with horseradish panna cotta, peanuts, sweet onion, and shaved dried olives – a perfectly balanced flavour symphony. In season, don’t miss the aromas and tastes of the forest, like sautéed chanterelles with carrot cream and herb-filled žlikrofi (traditional Slovenian dumplings). Čubr also serves daily specials, such as beef soup, braised veal shank, lamb, and pork cheeks with vegetable-oat risotto and celery purée. For those who cherish Čubr’s timeless classics, their sautéed veal liver is melt-in-your-mouth delicious. And dessert? The crispy, fruitfilled strudel is always available, though their dessert offerings change with the seasons, reflecting the same respect for ingredients that defines the entire dining experience.
