In the lively center of Maribor, where the city's pulse merges with the Drava River, Fudo has remained one of the city's key culinary spots for many years. A bistro with a distinct character relies on a simple but confident concept: quality ingredients, clear flavours and a wine accompaniment. Guided by the daily inspiration and rhythm of the season, the kitchen creates modern, visually appealing plates. Without unnecessary complication, but with enough finesse, they prepare meat, fish and local vegetables to satisfy even the most demanding gourmet. Their philosophy encourages sharing food and socializing as every bite becomes a cause for conversation. We were delighted by the slices of top-quality sea bass, marinated in orange juice, which gives the dish a citrus sweetness, and ginger adds a burning freshness. An exquisite vegetarian creation with a velvety burrata that spills its milky core over artichoke leaves, it enlivens an aromatic chimichuri made from garlic and fresh herbs. Light and refreshing! A meticulously roasted fillet of sturdy gopher rests on velvety potato espuma, winter chicory leaves and crispy curly kale provide a contrast. Fudo remains a place where good food and excellent wine are still the surest recipe for a pleasant evening.
