In the vibrant center of Maribor, where the pulse of the city merges with the Drava River, Fudo has for years remained one of the city’s key culinary destinations. This bistro with a distinctive character is built on a simple yet confident concept: quality ingredients, clear flavours, and thoughtful wine pairings. Guided by daily inspiration and the rhythm of the seasons, the kitchen creates modern, visually striking dishes. Without unnecessary complication, yet with enough finesse, they prepare meat, fish, and local vegetables to satisfy even the most demanding gourmets. Their philosophy encourages sharing food and enjoying company, where every bite becomes the start of a conversation. We were especially impressed by slices of premium sea bass marinated in orange juice, which lends the dish a delicate citrus sweetness, while ginger adds vibrant spicy freshness. An excellent vegetarian creation featuring velvety burrata - its creamy center flowing over artichoke petals - is elevated by aromatic chimichurri made from garlic and fresh herbs. Light, refreshing, and full of character. Equally memorable was the precisely cooked amberjack fillet resting on silky potato espuma, contrasted beautifully by winter radicchio leaves and crispy curly kale. Fudo remains a place where great food and exceptional wine continue to be the most reliable recipe for a perfect evening.
