Amid rolling vineyards, Doppler Restaurant enjoys a spectacular hilltop setting with panoramic 360-degree views across the surrounding lands-cape. Wine remains at the heart of the Doppler estate, but the modern winery now beats just as strongly for gastronomy. With the opening of the restaurant, the estate has become a destination for those seeking more than a glass of exceptional wine - here, the plates tell a story of the region, seasonal ingredients, and creative culinary inspiration. The expe-rience begins with a series of refined amuse-bouches that immediately awaken the senses. A dumpling filled with cheese matured in Karst caves, a crispy bite featuring smoked trout, and a refreshing tart with broccoli and pickled mushrooms each demonstrate the kitchen’s ability to balance local character with contemporary technique. The house interpretation of esihflajš is equally impressive. Every element feels deeply rooted in the local environment while surprising with bold flavour combinations and subtle international influences. Among the standout dishes is a beauti-fully executed ceviche. Another highlight is the rabbit raviolo, showcasing both delicacy and depth. Dessert continues the same dialogue between tradition and innovation. At Doppler, wine and food exist in perfect har-mony. Neither overshadows the other; instead, they elevate one another, creating an experience where every sip and every bite becomes a reason to return. Kozjak nad Pesnico has never tasted this good.
