Gault&Millau's review 2026
Remarkable Restaurant
The plates at Štorja carry the chef’s confident signature and captivate at first glance with their layered complexity. The chef is unafraid of bold combinations and a larger number of components, yet this is precisely where the magic lies: nothing appears on the plate without purpose. What might seem like a risky experiment ultimately comes together in perfect harmony. To begin, a cauliflower soup pleasantly warms the palate, delicately seasoned with vanilla and orange zest. Even more complex is the red cabbage terrine in its own juice, accompanied by cashews, black garlic and horseradish mayonnaise, balsamic pearls, ice cream, pumpkin seed oil, and parsnip crisps. Bold? Undoubtedly. Yet it is precisely in this interplay that the chef’s precision becomes evident - the flavours do not compete, but rather complement one another beautifully. The same can be said of the intensely green barley risotto in a chlorophyll-rich wild garlic sauce with citrus leaves, roasted garlic sauce, and pike cheeks, while the fish roulade conceals scampi and chestnuts within. The meat dishes follow the same rhythm, balancing daring ideas with technical precision. Braised cheeks with beetroot on roasted pumpkin cream are accompanied by cocoa and chili, alongside a corn mousse with white chocolate. Every plate is beautifully complemented by wine pairings selected from the restaurant’s extensive cellar. In this too, Štorja demonstrates just how far a kitchen can go when it possesses enough knowledge, courage, and a true sense of balance.
