Perched on the top floor of a five-star hotel in Ljubljana, B-Restaurant is a dining destination where the view is every bit as memorable as the cuisine. Floor-to-ceiling panoramic windows open above the city, revealing a sweeping vista of rooftops, landmarks, and the shimmering lights of the capital below. The restaurant’s culinary identity is rooted in Mediterranean cuisine with a distinctly local touch. Equally impressive is the service: attentive yet unobtrusive, professional without ever feeling formal, allowing guests to settle comfortably into the experience. Among the standout dishes is the braised sea bass fillet served with young spinach and fresh avocado. The fish remains beautifully moist and aromatic, while the lightly sautéed spinach contributes subtle earthy notes. Avocado adds creamy freshness and a gentle nuttiness that complements the delicate flavour of the sea bass. The result is a dish defined by balance, where the salinity of the sea meets contrasting textures and elegant simplicity. For dessert lovers, the highlight is undoubtedly the toffee caramel creation. Melted caramel flows across the plate like liquid gold, accompanied by crunchy hazelnut elements, chocolate glaze, and fig ice cream.
