Guardian of tradition and tasty cuisine

Gostilna Krištof in Predoslje is the quintessential Slovenian traditional pub. Not far from Kranj, this place remains a sort of stronghold of still pristine rural values and landscape. There, Uroš Gorjanc and his well-coordinated team write a story with a vision where they stress the ecological production of ingredients and their sustainability. Therefore, Gostilna Krištof has a very important role, as it is the junction and connecting element for the local farmers and growers of all the things local.

Chef’s philosophy is all about the proud, confident, and tasty cuisine that enriches the tradition with modern and unique approach. He does not, however, allow the latter to overshadow the tradition. This beautifully compliments Krištof’s concept of the rural Slovenian cuisine of our ancestors. Chef Gorjanc passionately creates dishes from local ingredients of the highest quality that are thought out to the last detail. As he is driven by creative restlessness, each visit is a new culinary experience of tradition with the modern twist.

Krištof’s manifesto is a very simple one, but if more restaurants would follow it, there would be much more places like this in Slovenia. They first and foremost wish to remain normal and down-to-earth. “With our feet firmly on the ground,” as Krištof Bolka, after whom the family pub is named, likes to say. For the last 25 years he is running the pub together with his brother Tomaž. The latter summarized the direction the restaurant is taking, and outlined the five signs of a good Slovenian pub: good water, good homemade bread, good clear beef soup, good salad and there must be at least one family member working at the pub at all times. The result are happy and content guests: locals, foreigners, heads of states, and important organizations! At Krištof’s, they all get a sense of homeliness and a serving of traditional dishes with the chef Gorjanc’s unique signature.
