Rich tradition and creative ideas. The past and the future are strongly connected here and you will get the feeling that time is running wild and stopping at the same time here. Brothers Krištof and Tomaž Bolka with chef Uroš Gorjanc all write a story with a vision where they stress the ecological production of ingredients and their sustainability. The dishes are thought out until the last detail and the restaurant truly offers different flavours, impeccable quality and a lovely atmosphere. The dishes are served by a well trained, friendly team and their wine list is just as impressive. Guests love to come back here because the menu consists of local ingredients and a recommended wine for every plate. Sautéed chanterelles with scrambled eggs, goat and sheep cheese went perfectly with fresh Malvasia and we were also very impressed by the chef’s creamy chanterelle soup with homemade ravioli filled with oxtail. The peak of our visit was the masterfully prepared lamb with a herbal crust, juicy, soft and full of taste, served with a gentle potato cream and mustard seeds, aubergine caviar, red peppers filled with Slovenian cereal and at the end, the waiter poured a thick wine sauce over the dish. Krištof’s light and refreshing summer desserts, fruit minestrone – melon cream with pieces of fresh strawberries and a crispy sponge cake and basil foam as well as Ana’s chocolate cake with yuzu gel and lemon ice cream rounded the unforgettable gourmet adventure nicely. They are driven by creative restlessness and we can hardly wait to see what they will think of until our next visit.
