Bistro Bombina does not rely on the size of its space, but it has a big culinary heart. The food, the setting, and the people all speak the same language here. Murals on the walls give the space a distinctive Zasavje character, yet the main story still comes from the kitchen. During our visit, the first aromas came from the sea: crudo of scallops with citrus fruits and slices of mandarin. Moules marinière – mussels in a sauce of wine, onion, and parsley – continued the meal in a light and elegant rhythm. It is a tried-and-tested seafood classic with nowhere to hide: the mussels must remain firm, while the sauce needs enough character to bring the dish together without weighing it down. Bombina also caters to those with a sweet tooth. Its sense of clear flavours, contrasts, and balance is revealed in a yoghurt dessert with pear and almond crumbs. As the menu changes weekly, the bistro does not rely on a single story. One day it may offer a quick lunch, the next a more thoughtfully composed menu. That is precisely part of its charm. And when you read the inscription on the wall, “Kr naprej, pa neč se sezuvat!” (“Come on in, no need to put your shoes off!”), it feels as though the entire spirit of Bombina is captured in those words. The directness of Zasavje, humour, warmth, and boundless culinary curiosity all contribute to a character that allows this small bistro in Trbovlje to leave a far greater impression than one might expect.
