L'avis de Gault&Millau

Sushimama is not a typical Japanese restaurant. Why? Because typical Japanese restaurants usually specialise in one type of dish. Sushimama offers much more than just one dish, suggested by its name – sushi, although this is exactly where you should start. There are two Japanese sushi masters who make sure it is perfect and they prepare it in front of guests. We enjoyed their crispy crab rolls and as a warm starter, we tried Japanese-style fried chicken: succulent meat, fried in light tempura dough. Even better than the fried goodies is the sauce where the acidity and bitterness of the Asian yuzu fruit fits perfectly with the citrus note of Japanese pepper, which also adds some spice. Of course, Sushimama does not stop at tempura but continues atypically with main courses and shows masterful skills, combining top-notch ingredients into plates, which are not completely Japanese but have a strong and brilliant Japanese character. The Black Angus beefsteak is quickly grilled and seasoned with a pinch of salt, served with dark miso sauce, fresh figs and grilled vegetables, where the Sicilian eggplant excites with its meaty structure and full flavour. Even though the Japanese do not usually eat dessert at the end of the meal, you should not leave the restaurant without trying one of their desserts. The excellent Fetiché pâtisserie is namely Sushimama’s sister and they are famous for refined cakes and wonderful ice creams.
