“Nature is my inspiration,” is what chef Marko Pavčnik, one of the most creative chefs in Slovenia, likes to say when he plays with the ingredients and creating new dishes. The combinations of smells and flavours are unbeatable, entwined with unexpected culinary elements that bring a touch of Asia or some world metropolis to the dish. He is reinventing traditional Slovene dishes and making them lighter and his tireless and passionate exploration of flavours enables the guests to take an unforgettable culinary trip. They offer several tasting menus here, from four to ten courses (from 39 to 92 euros). The chef is inspired by wild food, he elevates even the simplest of ingredients to great heights, and he harvests most of the ingredients himself. The juicy deer tartare is nicely complemented by the earthly flavours of the fresh chanterelle mushrooms, spruce dust gives it a forest feel, and the dock and the rowan fruit contribute freshness. If you prefer seafood you can choose the Mediterranean prawn tartare with the refreshing tomato consommé and tomato sorbet. The mixture of creaminess, minerality and freshness is really exciting. Homemade tortellini pasta with thyme, black walnut and seared pear are a treat both for the eyes as well as taste buds. It doesn't matter whether the star of the dish is a pike, zander, rabbit, beef, the Krškopolje pig, or deer – the chef sets high standards with both the ingredients as well as the presentation of the dish.
