The bistro game of taste by chef Bine Volčič who manages to combine French sophistication, Scandinavian-Slovenian primal flavours and pure rock’n’roll, is all based on the zero-waste principle. The chef is a culinary TV star and was educated in the land of haute cuisine – France. His dishes are truly charming both for fine dining fans and the ones who prefer simple bistro food. At Monstera, they prepare simple bistro dishes at lunchtime (three courses for 21 euros) and during the weekends and evenings, they make actual culinary artworks. We chose the 7-course menu for 59 euros. While listening to rock’n’roll sounds, the well-played team will serve well-chosen drops of local winemakers and they also have several kinds of beer from their own brewery, homemade juices and syrups and Ljubljana water, which they transform into sparkling if you wish. At Bine’s, your tastebuds will dance when trying smoked trout, mayonnaise wasabi and buckwheat chips; the cold cucumber soup with watermelon and feta cheese; squid filled with black risotto, fennel and parsley cream. The seasonal dinner tasting menu with wine pairing will stay imprinted in your memory for a long time – memory of the delicious chanterelles with potato purée, peaches marinated in saffron, aged dear fillet with spruce tips, pistachio and caramelised onions … And for dessert lovers, a buttery brioche, tarragon ice cream and raspberry cream. Oh, la la!
