In the city centre, close to the Parliament, Maxim restaurant has it all: above it a shining shopping mall, next to it a big garage house. You will be greeted by a friendly lady who will take your coat and if you are closing an important deal at lunch, you can sit in a special business room. If you simply want to enjoy good food, you will feel it even more in the ambiance of the elegant dining area. The service is flawless, just like the plates they serve, which mirror the best ingredients and refined techniques in the harmony of taste. While chef Peter Kovač pampers his guests with French, Mediterranean and local haute cuisine, sommelier Matic Šubic recommends the best wine pairings from their wide and carefully constructed wine list. After chef’s greetings and a warm starter with goose liver and homemade ravioli filled with Albumin cottage cheese, creamy Jerusalem artichoke purée, hot cream and veal sauce with cooked pieces of dried apricot, when you already fell like you are in heaven, they bring you the main course. A perfect, soft, succulent deer fillet with a crispy crust of roasted Piemonte hazelnuts. The hazelnut cream is light, the bread soufflé is served with a reduction of forest fruits caramelised in port wine and the glazed vegetables adds crunch and colour. The aesthetically pleasing dishes offer an incredible combination of earthly flavours. The sweet finale also convinces with its urban feel. We paid 54 euros for three plates but they also serve business lunches with three courses for 25 euros.
