Chef with youthful energy but at the same time longterm and worldwide experience that reach from Asian fusion all the way to French perfection and Nordic primal cooking style. All of this resides in this restaurant with a bistro look – but don’t let that fool you! The well trained and incredibly friendly team will take you on a trip of a thousand tastes. They will excite you with delicious bites, served on the naked table as amuse bouche. It will be hard to resist their freshly baked bread from sourdough with smoked butter, yeast extract and homemade lard spread. The dishes that follow only confirm the chef’s understanding of primal taste, refinement and harmony with a daring twist. The tasting menu (8 or 9 courses for 83 or 95 euros or weekly lunches for 28 euros) will enchant you with a delicious porcini mushroom on butter with an egg yolk confit, which reaches the taste of umami. The veal sweetbread with fermented black garlic, hidden into homegrown salad leaves was voted the star of the evening. They leave nothing to chance and serve the 6-month aged beef back of Slovenian Limusin cow, which invites you to discover the sweetness of life. Sweetness is also brought by their refined desserts with French and Slovenian vibes. We recommend their excellent wine pairing choice, even though the wine coolers are filled with excellent wines from around the world. At Atelje, they seduce their guests with art, both the one hanging on their walls, made by Slovenian artists or the one coming from the kitchen.
