The NAV Restaurant is located in the city center, in one of Zagreb’s streets with a rich gastronomic scene. The entrance from the yard, as well as the entrance to the restaurant, located on the 1st floor, will not impress you, but don’t hesitate to enter the world of chef Tvrtko Šakota and his Modern Croatian cuisine. The NAV Restaurant is cozy, has a total of 25 seats, and the kitchen is open so that the chef can always be in communication with the guests. He and his team devote themselves to them sincerely, kindly and above all, professionally. The atmosphere is relaxed. We started with home-made bread made with home-made yeast served with lard of Banija spotted pig enriched with fermented lemon juice (2 years!) which gave a completely new refreshing taste to the lard. In accordance with the national tradition, the lard was sprinkled with paprika. We chose the 5-courses menu. The first dish was a profiterole filled with curd cream and pumpkin powder. The contrast of the crunchy crust and delicate, yet strong curd cream created a harmony of flavours and textures. It was followed by the marinated kohlrabi with orange on home-made sour cream, which they prepare themselves. A carefully created dish with refreshingly sourish taste and interwoven flavours of kohlrabi and orange. The orange peel was perfectly prepared, and the element which gave this dish a special note was the kohlrabi oil. The venison tartare served with poached quail egg, giving it additional fullness, was excellent. The cracker made of soup stock contributed to the attractiveness of the dish. And finally, something for the connoisseurs: the veal sweetbread served with a mixture of different types of beans and barley cooked in fermented tomato water which aged for 7 months. A very refreshing dessert, which doesn’t fit in the traditional idea of sweets in the region, was made from local ingredients: yogurt, which they prepare themselves, complimented with pieces of apple, fermented honey, wheat and fermented beetroot; the combination was sprinkled with premium quality cinnamon. In accordance with the consistent approach of nurturing authentic preparation of the ingredients, they also serve NAV craft beer and offer an interesting selection of local and imported wines. They are served by the glass, but you can order the whole bottle as well. Fine, interesting, exciting. The NAV restaurant has just opened, but chef Tvrtko Šakota has confirmed that he is one of the few Croatian chefs who develops author’s kitchen.
